Nassi is a Javanese dish that is very popular in French Guyana. If the rice is replaced by spaghetti it is called Bami.
5 chicken drumsticks
1 half lemon
3 sprigs of parsley
2 sprigs of civet
4 tablespoons of chiken marinade (you can use soy sauce or satay sauce instead)
2 tablespoons of maggi
3 or 4 pinches of salt
a little pepper
2 teaspoons of ginger
1/2 small onion
1 cucumber
1 clove of garlic
3 tablespoons of white vinegar (I ran out and used red wine vinegar)
3 tablespoons of warm water
2 tablespoons of sugar
A pinch of salt
Rice (about 250g)
In a dish put your chicken drumsticks and put on top the lemon juice, finely chopped parsley and cive, chopped onion, salt, pepper, the 2 tablespoons of maggi, ginger and soy sauce. Mix well, wrap and chill for 3 to 4 hours.
Heat oil in the bottom of a frying pan, add 2 tablespoons of sugar and when the oil is hot, brown the chicken.
Add the marinade and brown your chicken in the marinade over medium heat for 10 minutes, add a glass of water and continue cooking over low heat for 15 to 20 minutes for a little more sauce.
Peel and slice your cucumber into thin slices and put it in your serving dish.
In a bowl, mix the crushed garlic clove, vinegar, water, salt and sugar.
Pour this mixture over the cucumbers. Chill until ready to serve.
In a frying pan, put some oil and lightly fry 2 cloves of garlic and the rest of the onion finely chopped over medium heat.
Add a small piece of grated ginger and 4 tablespoons of soy.
Fry the rice in the sauce over low heat until it is well colored.
Arrange the chicken drumstick on a plate with a little cooking sauce, a few slices of cucumber and the rice.
